Being able to assess the quality of tuna requires tremendous experience. In Japan, this experience is being „taught” to machines.

AI, more specifically machine seeing and machine learning are being used for this. The Japanese Dentsu Inc. developed Tuna Scope was made for a special task. Trained with the help of several thousand pictures of tuna meat, this app can tell you how fresh and what quality the photographed tuna is.

The app inspects the color and structure of the meat, the same things experts inspect when buying tuna for restaurants. One can draw conclusions from these attributes about the past of the fish, and of course about its taste.

The Verge has pointed out, that (based on conversations with experts) it’s unlikely this app will replace live inspection, since a phone can’t touch the fish.
