Fish on pizza? Why not? If you just want to surprise yourself, or if you’re expecting guests, either way, with this pizza made with whole wheat flour and anchovies you simply cannot go wrong!
Ingredients for 2:
For the pizza dough:
- 20 dkg whole wheat flour
- 2 dl cold water
- 2 tsp rapid-rise yeast
- 2 tsp salt
- a little cooking oil
For the tomato sauce:
- 1 can of tomato paste
- 1 smaller red onion
- 2 tsp sugar
- salt, black pepper, oregano, basil, paprika, bayleaves
- a little cooking oil and water
For the topping:
- 1 can of anchovies (in olive oil)
- 10 dkg mozzarella
- a couple cherry tomatoes
How to prepare:
- Mix the flour with the yeast and salt, then add water until your dough becomes easily kneadable. Let your dough rest and proof for 2-3 hours.
- In the meantime, prepare the pizza sauce: sauté the diced onions on a little oil, add in the tomato paste, and a little (approx. 50-100 ml) water.
- Add salt, pepper, sugar and the rest of your herbs and spices to taste. Cook down your sauce until it thickens, continuously stirring it.
- Divide your dough into smaller pieces, then form them into disc shapes with lightly oiled hands, and finally place your mini-pizzas on a parchment paper lined rimmed baking sheet. Spread your pizza sauce over them, and then place the anchovies and sliced tomatoes and mozzarella on them.
- Pre-heat your oven to 210 °C (410 °F), then bake your pizza in it for 15 minutes!
