If you just happened to have a portion of salmon on hand, get a little crazy with it and make it into these incredibly tasty salmon balls!

They are delicious AND full of Omega-3! These balls can be made quickly and easily from canned salmon, you only need a handful of other ingredients for it! They are beautiful to look at, and healthy, as well, making them – coupled with a nice side dish– the perfect meal for a get-together!

Ingredients:
  • 250 g potatos, cut up
  • 2 x 200 g salmon fillets, without their liquid
  • 1 tbsp lemon juice
  • 1 tbsp dill leaves, finely chopped
  • 1/2 cup breadcrumbs
  • 1 tbsp mayonnaise
  • 1/4 tsp garlic powder (or freshly pressed garlic)
  • 1/4 cup diced spring onion
  • salt, pepper
  • olive oil for the cooking

How to prepare:

  1. Cook the potatoes in boiling water until tender. Strain them thoroughly, then purée them until homogeneous.
  2. Heat up your oven to 180 °C (356 °F), line your baking sheet with parchment paper.
  3. Add the finely chopped salmon, lemon juice, dill, onion, mayo and garlic to the purée. Season it with salt and pepper, and then thoroughly mix everything together (you could even use a handmixer for this).
  4. Form balls from the mixture the size of ping pong balls, then coat those in breadcrumbs.
  5. Place the balls into the pan, and lightly spray olive oil around them. Using the fan oven setting, bake them for approximately 15-20 minutes, until evenly golden brown.
  6. Serve them up with a salad or with oven-baked potatoes. Use tartar sauce chilli sauce as your dips.
