You can prepare an extremely wide array of dishes using fish – not necessarily only fresh or frozen fish, either, but even canned fish! One could even upgrade an old but gold favorite dish of theirs if they were to substitute meat with fish. This smooth, easy-to-prepare mackerel meatloaf, for example, is a great starting point to endear your whole family to fish!

This mackerel meatloaf is incredibly easy to prepare, it’s completely fool-proof. It’s creamy, piquant and spicy. Even the pickiest of kids would eat the whole thing, were one to serve it to them alongside a homemade BBQ sauce.

Ingredients:

For the mackerel meatloaf:

  • 375 grams (approx. 3 cans) mackarel fillets in olive oil
  • 2 eggs
  • 1/4 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tbsp mayonnaise
  • 2 tbsp mustard
  • 2 tbsp finely chopped chives or parsley

For the frying:A small amount of vegetable oil

For the jazzed up BBQ sauce: 1/4 cup of mayo, 1/4 cup BBQ sauce, 2 tbsp lemon juice

How to prepare:

  1. First, pour out the oil from the cans, remove the spines of the fish with the help of a fork, then place the fish in a mixing bowl. Using a fork, thoroughly smash up the mackerel, until it reaches a nearly creamy consistency.
  2. Add the rest of your ingredients to your mackerel: the eggs, parmesan, breadcrumbs, mayo, mustard and finally the finely chopped chives or parsley.
  3. Form smaller patties from the mixture, then cook them in a little cooking oil (there does not need to be a whole lot of fat/grease in your pan), until both sides of your patties have turned golden brown.
  4. Simply mix together all the ingredients for your homemade, special BBQ sauce

You could serve this meatloaf with a fresh veggie salad as a side, some oven baked sweet potatoes, or even rice – the end result will be heavenly, whatever your sides may be!
