The legumes in this soup are a rich source of proteins, dietary fibre, vitamins and minerals, and as well as being nutritious and filling, they are a good substitute for meat consumption. The seaweed is also an excellent source of fibre, protein and vitamins, and adds a slightly salty flavour to the soup.
